Good news: You’re SUPPOSED TO drink too much. So here’s your next-day dinner plans…

Recipe

Tortillas (dealers choice)
Avocado (smashed/sliced/whipped/pureed/chunked/spread)
Salsa  (any salsa will be great, something with some zip to help wake you up is preferred)
Beans  (whatever type you bought when you panicked and stocked up on canned food for the coronavirus)
Egg  (if you’re fortunate enough to get your hands on some)
Cheese  (cotija please but cheese is cheese and that makes it great)
Cooking oil (canola/vegetable/peanut/coconut/avocado)

Heat a few tablespoons of cooking oil in a small skillet over medium heat. When the oil shimmers cook the tortilla for 30-45 seconds per side, until it is crispy throughout. Remove to a paper towel lined plate. Season with salt while it is still warm.

Turn the heat down to low-medium heat.

Crack an egg into this same pan and cook it until your heart’s content. Sunny side up is my favorite! While the egg is cooking, dress the tortilla.

In no particular order, top the tortilla with beans prepared to your liking, salsa, and avocado.

Finish dressing the crispy tortilla with cooked egg and a pinch or handful of cheese, it’s your breakfast!

Add some hot sauce for extra zing!

You can add pretty much anything you want to this dish and it will be fantastic!
