Mother’s Day, Breakfast in Bed
Treat Mom to Breakfast in Bed with Lemon and Lavender Scones right from the oven, a good cup of coffee and a sweet card – better than diamonds! Here is an easy-to-follow recipe, compliments a Joy Wallace, to show Mom how much she is loved.
First preheat oven to 350 and gather the ingredients. You’ll need:
2 C All Purpose Flour
1/3 C Sugar
1 T Baking Powder
1/2 t Salt
4 oz Butter
1/4 C Heavy Cream
1 t Dry Lavender
2 t Grated Lemon Zest
Mix the dry ingredients in a large bowl. Rub the dry ingredients with the lemon zest to extract the flavor. Cut the cold butter into cubes and then cut the cubed butter into the dry ingredients with a pastry cutter until incorporated. The result should look like pea-sized crumbles. Mix in the lavender and heavy cream just until moist – don’t over-mix the dough. Scoop out about 15 even-sized balls of dough, place on a cookie sheet and refrigerate for 1 hour. Bake at 350 until light golden in color, about 10 to 12 minutes.

For the Grand Dame Mom, Seaspice has a Miami riverside feast fit for a queen with Mother’s Day Suckling Pig or the Mother’s Day Seafood Carnival. Carved and served tableside with yuca gratin, crispy green plantain fries and pickled beets, the Suckling Pig is a “4 person minimum” dish which must be pre-ordered 2 days before the reservation to ensure the proper marinade and cooking time. For mothers with a penchant for seafood, the Seafood Carnival offers two 2-lb lobsters, 8 jumbo prawns, 24 oysters, Alaskan king crab, Florida stone crab, tuna sashimi, salmon sashimi, Hamachi sashimi, salmon coconut ceviche, and 2-oz. sevruga caviar.
