Foodie Find: Cebiche at La Mar by Gastón Acurio
Just beside the glistening waters of Biscayne Bay, La Mar by Gastón Acurio has opened in the Mandarin Oriental and is serving seafood, Peruvian style. Outside on the patio, the water and Miami skyline combine to offer a dramatic backdrop while inside, rich woods, fishnets with dangling crystals and a bar covered in aqua create a setting suitable for an enclave this luxurious.
Acurio – a chef with international acclaim – has created a list of specialties that are fresh and plentiful. Because he’s a worldwide authority on cebiche (spelled here with Peruvian-panache) maintaining that the dish prepared from fresh fish cured in citrus juices and spiced with a whirlwind of flavors was born in Lima, it’s critical to sample Acurio’s many creations. The Clásico is tried and true with fluke, cilantro, red onions, choclo and clasico leche de tigre. But the Chifa offers a bounty of original flavors, with salmon, peanuts, ginger, avocado, daikon and cucumber. The sampler offers three options, including the Nikei with tuna, red onions, nori, and cucumber.
